I personally think for the range of subjects you want to shoot the 7D would be a good option as the 1.6x crop factor will work in your favour for wildlife.
The 5D Mk III is an excellent camera but then it is 2.5 times the price of the 7D so for the same money you could get the 7D and a decent lens or two.
Like all these things it comes down to money, if you have loads of cash then the 5D is a great option if not then the 7D is more affordable.
Personally I was wondering for weeks whether to buy the 7D or 5D mk II and after seeking advice went for the 7D and I am glad I did, the pop up flash for example is handy in certain situations and there is a wider choice of lenses at more affordable prices.
Having said that I would love the 5D mk III because of the better auto focus,low light performance, dynamic range and full frame. But then I wouldn't be without my 7D
