I normally use Aperture Priority with an aperture of f11 for landscapes and, if I were to shoot portraits around f5.6. This will allow the camera to choose the shutter speed for me. You will have to keep an eye on the shutter speed though to ensure that it is fast enough for hand holding without camera shake (usually at or greater than your focal length).
