The image that appears on your camera's LCD screen is a Jpeg that is embedded into your Raw file therefore, processed by the camera's software. If you have increased the saturation or contrast via you camera controls, then it will be included in the Jpeg file but not the Raw file, this is why Raw file can look flat when you open them on your computer.
