Would somebody please explain simply why light diffracts through a lens using an aperture of f16 or smaller and what effect it has on you image?

Light bounces off the aperture blades and gets splattered onto the sensor instead of precisely directed. The narrower the aperture is the greater the area of the blades there is in the way of the light, and so more light is scattered about, and that reduced the sharpness.

I want to buy a portrait zoom, to be used with adults and children in a studio set up. Does anyone recomend what they think is the best? I have £400 to spend and would like to ge tthe best deal

You don't say which make of camera you have, but for portraits pick a telephoto lens with a focal length starting at no less than 55mm.
