Egret

All my pictures taken of a great white egret seem to be comming out with little detail and blurey.

I'm using a Canon T1i and a Canon 70-300 Lens.

What setting would be appropriate.

You're not giving much useful information. Are they stationary or moving? In flight? How far away are they? What support are you using for the camera? What shutter speed are you getting, and at what aperture and ISO settings? Do you have any filters in place? Are you shooting through anything, such as a window? Is your lens clean? Do you have a lens hood on?
