I think this all depends on your camera. My Canon 500d can take automatically bracketed exposures (AEB) in single, continuous or self-timed/remote modes. In single mode you have to press the shutter release for each exposure (so really needs to be on a tripod), but in continuous and self-timed modes you press the shutter release once, and the camera will take three exposures (so you should be able to handhold, as long as there is sufficient light).
Note: AEB on my 500d only works in advanced exposure modes and doesn't work when using flash.
