Just add that the new Nikon D800 has an option for a quite shutter.

You could always get a Sigma 150-500mm and the jet-engine-like noise of the OS winding up will drown out the mirror slap! I'm always a bit aware when I go into a hide with my setup (that lens on a 7d) - but the birds don't seem to mind (and I get way more irritated with the occasional machine-gunner!)
