The third one is the best of the bunch for me, but none of them are particularly striking. You could probably achieve a better tilt shift look in post production.
The subject material in the first is quite bland.
The focus point in the second is not defined and the scene is too "busy". A higher vantage point would have worked better.
The third is more defined but the subject is in shade, so reducing the vibrance of the image.
The two Gondolas appear to be equally focused, enlarging the focus plane depth and reducing the effect.
