Nikon D 7000 Camera

Can anyone tell me simply how change JPEG to RAW on the above camera.

It will be in the menu. Try having a look at the manual, it will be your best friend.

Indeed - it's in the shooting menu. Be aware, it's called "NEF", as that is nikon's raw format.

I'm a little concerned that you have a £1000 camera and no manual

It must have a 'qual' button. Press that and turn the wheel until you get 'raw' in the display instead of jpg.

Yup, bottom left corner of the rear of the camera. On the left of the screen.

It's the zoom in button and has QUAL written above it.

I must say I'm slightly concerned that someone would spend that much money on a camera and not notice that...
