I have sort of the same problem, except usually we are in a sailboat and not as close to the water as you,but we also have a kayak. I still have not found a good way to dry the lens (I hope someone will answer you) but for a point and shoot we have had a couple of waterproof cameras with the slide down lens cover (currently a sony) so you only open uncover the lens right before you take the picture. Not the best answer....
