I believe that the number of shots does not matter and you may need more than 3 to capture the full dynamic range.
Also checking the histogram of each picture will help.

Thanks for the information Jeff, I'll take the tripod out and have another go. And I should be looking at the histogram more than I currently do, so thanks for the reminder.
