It didn't make 100 sense to me. Never used Elements but have Corel and im very big on Adobe Photoshop which is elements with more bells and not so jazzy looking. When you do a black and white conversion in PS you use an adjustment layer so all you need do is turn off the black & white adjustment layer to see the original. Its also good practice to duplicate your first layer (or the layer with the photo in) and then do all the editing to the copy so if you wish to revert back all you have do is turn the layers above the original off.

If your doing it a different way then think about trying to do it this way as non destructive editing will save you hours.

Failing that Hold Ctrl + Alt and keep pressing Z till all your mistakes have gone. This is the keyboard shortcut for undo in PS so should work in elements. If not its hold Ctrl then press Z. The later works in many programs.
