What a nice problem to have!
The 60D is a very well specced 'enthusiast' camera, and so is the 'enthusiast/sem-pro' 7D; they're both 18-megapixel machines, the 7D gets that great 8fps burst mode and other bonuses, but ultimately it really comes down to your budget and handling preference.
Have you handled either of them? Personally I prefer the bigger 60D/7D cameras, the feel better in the hand, and are better balanced with bigger lenses.

I have to agree with wave01, that you may well be better off with the 600D as you're travelling around, as the 600D is simiar size to the 1100D so much lighter than the 60D, however the 600D has much better specs over the 1100D; with 18Mp sensor, faster burst rate and bigger and vari-angle screen for shooting in tricky spots, plus more in-camera filters for fun effects.
