This is the red LED which indicates a file is being written to the memory card? There's a reason it comes on, some of it is historical, but it's next to the door for the memory card slot, in previous models if the door was opened the camera would switch off and the file being written and all others in the queue would be lost. On the latest generation of cameras opening the door will only switch the camera off after the file has been written.
As a consequence it is now possible to remove the card from the camera while a file is still being written to it. This could potentially damage the card or the camera or both. The light is there now to warn you that the file is being written and when it's off it's safe to remove the card.
If Canon were to allow users to turn this off it could leave them liable for damaged cards, cameras, and possibly worse, lost images.
It's there for a good reason, best to leave it be!
