Turkey sandwiches anyone?
 
Hardly any turkey left in my house, thank goodness! Curry tomorrow to finish it off me thinks.

Had a turkey sandwich tonight :) Of the three Christmas dinners this season, only one was turkey. We had prime rib with my wife's extended family, lamb with her immediate family and then turkey on boxing day with my family.

Had three cooked meals with the turkey and it will be salad tonight. I had a Turkey crown, which I cut in half, and the other half will be cooked on the 1st Jan 2011. :D

We only had turkey on Christmas Day. My wife carved the remainder of it up and froze it, to be used at a later date. We don't get sick of it that way. We had lamb on boxing day and yesterday. Liver casserole tonight and beef for New Year.

We went to my daughter's for Christmas day [Turkey] then everyone here boxing day [Beef Wellington] so not much in the way of leftovers, apart from mince pies and lots of cheeses.
I miss having lots of leftovers, nothing can beat cold turkey with bubble and squeak on Boxing day.
I then usually do what Baffled's wife does and freeze the rest of the meat and boil up the carcass for a big pan of soup.
