Our professional photographer's recommended gear: Lastolite Universal Bracket

Lastolite Universal Bracket
I use window light for the majority of my food shots, but this often needs to be diffused. This arm allows me to keep my circular diffuser in the precise position throughout a set up. It is universal, so works with reflectors from 50-120cm circumference. The Lastolite 1100 Universal Bracket costs around £50 ($70) and attaches to a studio stand via its standard spigot.

Nikon Camera Control Pro 2 (£130, $150) lets Jason save images to his Macbook Pro as he shoots, and review the shots on the larger LCD screen.

California Sunbounce Sunswatter Pro
Outdoors you need your diffusers to be big if you want to soften the sunlight. This Sunswatter is available in three different sizes: 4x3ft, 6x4ft and 8x6ft. The largest version costs £430 ($630) – and you need a strong-armed assistant with a long boom pole, or a very sturdy stand, to support it.

Chopsticks & Tweezers
Jason carries a cup full of implements to move the food so that it looks perfect. There are brushes, spoons and tweezers – and this chopstick is great for getting the right texture on the surface of the soup!

Our professional photographer's recommended gear: Wamberley Plamp

Wimberley Plamp
The Plamp is an ingenious invention that Jason uses with his garden photography for holding plant stems in position; it stops them moving around in the wind. There are clamps on either end of a multi-jointed arm – one end attaches to the plant and the other to a tripod.

Inside, Jason uses the Plamp for holding small reflectors in place (£30, $40). To fill small areas Jason uses sheets of A3 5mm white foamboard (£14 for five sheets from Ryman, but available at other stationers and art supply stores). One end of the Plamp attaches to the table, and the other to the foam.
