Black and white seems to be a very popular choice because people feel they will look better in the photograph.
Remember a portrait does not have to be head and shoulder, to be successful it need to represent the couple when they are relaxed.
Sometimes I will ask a couple to warm up to walk towards or away from the camera to get them to relax.
